Naturally gluten-free, this super nutritious staple is nutty, earthy and has a bit bitter flavour and is a great substitute for rice. Very high in protein and fibre. Makes great groat porridge or as a side dish. 
organic hulled buckwheat
To make groat porridge, use 1 cup of buckwheat groats per 2 cups of water. Bring water to a boil in a small pot. Add buckwheat and a pinch of salt. Return to a boil, then reduce heat to a simmer, cover and cook for 10-15 minutes until tender. Drain any remaining water.
