Mixture with Greek rice yellow parboiled with black, wild rice that becomes very spiced and can be used to make pilaf. It mainly accompanies other meals but can also be cooked as a main meal. The classic way of cooking is very easy, all you need is a little water and salt and if you want to give it a sweet, spicy, smoky taste, use the appropriate spices.

Rinse the rice. Soak (optional, 30 mins). Use a 2:1 water-to-rice ratio. Bring to a boil, simmer covered for 15-20 mins. Let it rest, then fluff with a fork.
