Also known as converted rice, is a partially precooked rice, famous in Asia and Africa. Parboiling happens when you soak, steam, and dry rice while it’s still in its inedible outer husk. This process turns the rice in yellow hue. Makes fluffier and less sticky rice dish; ideal for a pilau dish.

Place 1 cup of rice and 2 & 1/4 cups of water in a pot. At preference, add oil or batter and a pinch of salt. After boiling, cover the pot and cook over low heat for 20 minutes. Remove from heat and leave it covered for 5 minutes. Fluff with fork and serve.
